Tips to Cook Healthy Qurbani Meat, Shared by This UMM Lecturer

Eid al-Adha is a much-awaited moment for Muslims worldwide. At that moment, many Muslims gather with family while enjoying processed meat. Unfortunately, some people consume excessive meat, which endangers their health—especially those already at a vulnerable age and survivors of certain diseases.

Seeing this phenomenon, Edi Purwanto, S.Kep., Ns. MNg. as a Lecturer at the Faculty of Health Sciences, University of Muhammadiyah Malang (UMM), provides various tips on how to make healthy meat preparations during the holidays. In Indonesia, animals that are usually slaughtered are cows and goats. Both have nutrients that are good for the body. 

Many myths circulate that goat meat is much less healthy than beef. But Edi denies that. According to him, both portions of meat contain animal nutrients that are good and needed by the body.

"Beef and goat meat are good for health, but it will be very dangerous if consumed excessively, especially during Eid al-Adha," he said. 

Most Indonesians cook their Qurbani meat with satay. In addition to its delicious taste, cooking satay fosters closeness between families. Edi believes there is no age limit for those who want to enjoy the satay. However, what needs to be considered is a person's medical history. Especially nowadays, diseases such as heart disease, low blood pressure, and even hypertension can attack anyone. Not just those who are elderly.  

"In this era, diseases no longer look at old or young age, but based on habits and lifestyle. Therefore, make a habit of healthy living as early as possible," he said.

Interestingly, Edi also gave some tips on cooking satay to make it healthier. One of them is to ensure that the pieces of meat are not too thick and thin to ensure the inner and outer maturity of the flesh. Uncooked meat will cause harmful effects because it contains bacteria. Too burnt meat is also not good for health because carcinogenetic substances (substances produced from charcoal) can cause cancer. 

Furthermore, he explained that according to the Food and Drug Monitoring Agency (Trans.: BPOM), the maximum consumption of carcinogenetic substances is 5mL/1 Kg of meat. He suggests using natural flavoring such as onions if you want to add flavoring. 

"Also, don't forget to combine meat with eating vegetables and fruits. Lastly, have awareness and control over your own health, because this health issue is often overlooked; even though it will have a huge impact on one's survival," he concluded. (imh/lib/wil)
